Sticky Chicken Drumsticks | Food-4Tots | Recipes for Toddlers - Part 2 (1)

RECIPE FOR STICKY CHICKEN DRUMSTICKS

Ingredients:
6 medium chicken drumsticks (about 120g each)
Dash of freshly ground black pepper

For the marinade:
3 tbsp honey (I used New Zealand Airborne Clover Honey)
2 tbsp light soy sauce
2 tbsp tomato ketchup
1 tbsp worchestershire sauce (I used Lea & Perrin brand)
2 tsp sweet chilli sauce
1 tsp garlic (crushed)
1 tsp grated ginger

For ganishing:
Roasted sesame seeds (optional)

Methods:

  1. Remove the papery skin from a clove of garlic. Squeeze the garlic through a garlic crusher.
  2. Peel a piece of root ginger and grate it on a fine grater.
  3. Combine all the ingredients for the marinade in a bowl and set aside.
  4. Slash 2 lines on the drumsticks with a knife and season with freshly ground black pepper.
  5. Pour the marinade over to coat the drumsticks and transfer all (together with the liquid) to a ziplop bag.
  6. Seal the bag tightly and refrigerate for at least two hours, or overnight (for best results).
  7. 30 minutes before baking, remove the drumsticks from the fridge. Preheat the oven at 200°C. Place the marinated drumsticks (together with the marinade) on a baking dish and bake for 40 minutes or until cooked through and golden brown, turning (with a pair of tongs) and basting (note 3) the drumsticks every 10 minutes or so.
  8. After baking, filter the leftover sauce through a sieve. Pour the sauce over a small sauce pan and simmeruntil thicken. Pour over the chicken drumsticks and sprinkle the roasted sesame seeds before serving.

Note:

  1. For honey, you can use any brand as long as it’s thick, creamy and with mild flavour.
  2. If you do not have a garlic crusher, use a knife/ chopper to smash garlic until flatten and mince it finely.
  3. Basting is a technique of brushing, spooning or pouring liquids over food, usually meat and poultry, as it cooks. It will keep the food moist, add colour and flavour of the food you are cooking. You can do basting with any tool you may have in your kitchen ranging from a simple spoon to a baster. (Source: TLC and Wikibook).
  4. The baking time varies depending on the size of your drumsticks.
  5. You can add another teaspoon sweet chili sauce for extra kick.
  6. The thickened sauce goes well with pasta and noddles.

Hi, can I omit or replace worchestershire sauce? Have not come across this sauce in Singapore.

JJmum: This worchestershire sauce plays an important part in this recipe. I had done without it before but the end result was not very satisfactory. This sauce (especially Lea & Perrins brand) is a very common condiment. You can find it at NTUC (Fairprice or Finest) and Cold Storage. Worchestershire sauce is easily available at most NTUC supermarkets and definitely Cold Storage. Should be located at the condiments section. However, there is usually only one brand available at NTUC. I’m not too certain about other heartland supermarkets though.

Wow! It looks fantastic! Garnished with sesame seeds – just how I do them. I also garnish with finely sliced spring onions. These drumsticks really look very very appetising

Ayu: I used Maggi brand but any brand will do. Thank you for the feedback. You can filter and simmer the leftover sauce until it is thicken. Then pour over the chicken drumsticks to create the glaze. 🙂
